Made from malted barley dried over peat smoke. The smoke clings to the grain and comes through in the whisky. Islay is famous for it.
The Rules
- Peat level is measured in phenol parts per million (ppm) of the malt
- Lightly peated is roughly under 20 ppm; heavily peated is around 40 ppm or more
